Raw cacao bars with fruits, seeds and nuts

This amazing bars are absolutely delicious, versatile, handy, and heathy as well!

Ideal as an energetic breakfast, as a snack at work or at school, for a party or afternoon tea with friends, and an incredible source of energy to deal with stress and daily fatigue.

You can change shape as you wish, and use different seeds, nuts and dry fruits creating your ideal raw healthy and fulfilling snack.

Ingredients:

1/2 cup rolled oats (possibly wholemeal)
1/3 cup white chia seeds
1/3 cup pumpkin seeds
1 cup walnuts
125 gr dried apples
125 gr fresh medjool dates, pitted
1/2 cup sultanas (or raisins)
1/2 cup coconut (shredded or chips) plus extra to garnish
1/4 cup raw cacao powder
1/2 cup coconut oil (melted)

Procedure:

Soak 1 tbs chia seeds into a small bowl with 2 tbs water for 5 minutes. In the meantime line an 18 x 28 cm slice pan with silicon baking paper.

Put walnuts, chopped dried apples, sultanas, coconut, oats and cacao in a processor and process them until finely chopped. Add pumpkin seeds and pulse to combine. Transfer to a large bowl and set aside.

Add dates to processor with soaked chia and coconut oil until it forms a paste.

Return half of the walnut mixture to processor and process to combine. Transfer to bowl with remaining mixture and stir.

Press mixture evenly into pan and top with extra coconut and chill for at least 2 hours in the fridge to firm.

Cut into bars (or shape into small squares or balls) and serve!

Suggestions:

This bars should be already sweet enough, but if you want you can add some honey as well.

Make it different, and try new combinations! You can add to your bars Godji berries, currants, cinnamon, ginger, dry prunes or apricots, linseeds, sunflower seeds, pecan or macadamia nuts, whatever your creativity and taste suggest!

Soak dry fruits, nuts and seeds for a couple of hours before using: you will activate them that way and they will become healthier and more digestible.

Use possibly organic and local ingredients.
